Directions:
Sift Flour, Sugar, Baking Power, Baking Soda, Cinnamon, & Salt into Large mixing bowl.
Add Vegetable Oil, Eggs, Grated Carrots, Pineapple (with juice), Vanilla & Walnuts.
Mix until moist. Beat with beaters or medium speed with electric mixer, for 2 minutes.
Pour in to Greased & Lightly Floured 9'' x 9'' x 2'' Baking Pan.
Bake at 350° F for 35 minutes.
Allow to cool in pan for about 10 minutes before removing from pan. Then allow cake to continue to cool.
Variation:
Frosting with a Cream Cheese Frosting is optional.

Can be served at room temperature.
Can be made in advance & stored in refrigerator for future serving.
